Take 3/4 cup of brown sugar and 1/3 cup of oil and mix it together. Add in 2 Tbs of honey, 1 tsp of vanilla and 2 eggs. (If you double the recipe go down to 3 eggs)
Add 1 cup of flour, 1/4 tsp of salt, 1 tsp of baking powder, and 1 tsp of cinnamon. I don't measure the cinnamon. I just dump it till it smell good!
Add 1 1/2 cups of oats.
Add 2 cups of Rice Krispies. This is a filler. If you need to do more oats you can. Generic cereal works as well.
Place the mixture on a Jelly Roll or as I call it a Cookie Sheet! Pat it until it fills the pan and is thinned out.
Ready for the oven! 350 degrees for 10 minutes.
Oven times will vary. You want it to be lightly golden and still springy to the touch. Cut into squares. Store in Tupperware like container. (Pan on the left is done. Pan on the right is ready to go into the oven.)
A couple tips!
1. You must double the recipe if using the cookie sheet. Otherwise use a 9x13 and bake for 20-25 minutes. Trust me. You will want to double the recipe!
2. You can add all kinds of other ingredients at the end such as: Chocolate Chips, Coconut, Peanut Butter, Dried Fruit or as Kyle asked tonight "Can we add some Rum?" Not sure where that came from but hey, it might be good!
3. These can be frozen. They will come out of the freezer and be just as yummy. You can also warm them back up in the microwave.
